The New Grove Distillery rum collection was born from the sharing of great expertise, offering authentic local products with pure Mauritian undertones. From the first stems sown to the first sip tasted, our rums bear the imprints of the Mauritian soil and toil. At New Grove Distillery, we craft Single Estate rums sustainably and are rated 5-star as we own and control the full 5-step production process. And while its “crop to drop” practice embodies excellence and expertise; it also allows for greater visibility and traceability.

Plantation & Crop

It all begins with the cultivation of sugarcane on the grounds of the Terra Estate, covering over 6,000 hectares. The sugarcane harvest season starts during winter, in June, and ends in December.

Milling

Terra Milling Ltd, located in Belle Vue Harel, is famous for being one of the most modern sugar mills on the island.

Today, Terra Milling produces up to 85K tons of 100% natural, sulphur free, world class sugars, as well as the very essence of our rum: pure cane juice and molasses. Our molasses contains 45% of fermentable sugars, which has a real positive impact on our fermentation process.

Distilling

New Grove Distillery has a production capacity of 7 million litres of alcohol yearly and its daily production capacity is 30,000 L. The molasses ferments with home-grown yeast for 35 hours. The wash is mainly distilled in a 20-tray Coffey still and ends in a 17-tray rectifying column, where pipes collect the most aromatic compounds. The output of the distillation is a 94% alcohol volume. Our distillation techniques allow us to vary the number of congeners in our recipe, from light to very heavy rums.

Ageing

Under the watchful eye of our Cellar Master, the rum obtained is then sent to the ageing cellars to be meticulously matured in specially selected barrels, ensuring optimal results. Barrels are filled with 65% alcohol volume, which is slowly diluted over the years to harmonise our rums and avoid volatile tastes. The type of wood used for our barrels are: New French & American oak casks, Ex-Cognac and Bourbon casks, Some exceptional barrels like ex-whisky casks, ex-wine casks, or exotic wood casks.  Angel shares are known to be around 8% yearly.

Blending &  bottling

Our rums are regularly inspected and tasted by our Cellar Master and team, to determine optimal blends.

The blending of various barrels is a crucial step, as it enhances aromas and mouthfeel of the final product, creating the richest and most savoury masterpieces. Our rums are non-chill-filtered to preserve all their natural flavours. They require constant and diligent monitoring, before moving on to the bottling and packaging stage.
